out in-house by the Pump Street Bakery themselves. It’s a labour intensive
process that can take several days and which, has resulted in a collection of
award winning, superior quality chocolate bars.
The obsessive care and attention lavished on the raw
ingredients by Pump Street Bakery is evident and has produced an exciting and
diverse, award winning, range of thirteen fine-flavour single estate chocolate
bars. Bean-to-bar chocolate bars, made from cocoa beans that were sourced
directly from family or owner-operated farms and cooperatives & fair traded
cocoa estates, based in Ecuador, Honduras, Madagascar, Venezuela and Grenada.
Each chocolate bar in the range carries its own distinctive
flavour profile, thanks to the small batches of cocoa beans the Pump Street
Bakery work with, and the meticulous maturing process the roasted cocoa beans go
through.
Amongst the Pump Street Bakery’s mouth-watering range is a
high cocoa content milk chocolate bar. With a cocoa content of 58% and reduced
sugar, it’s a milk chocolate strictly for grown-ups with its cocoa rich notes
of caramel and treacle, balanced with a zesty edge from the Madagascan cocoa
used.
For chocolate lovers of the world’s rarest cocoas, the Pump
Street Bakery’s Madagascar Criollo 74% dark chocolate bar is created from
genetically rare cocoa beans, direct from Madagascar, with notes of raspberries
and Membrillo (Quince jelly).
Chocoholics that crave only 100% pure cocoa dark chocolate
bars, with no added sugar, have not been forgotten either with an intensely bitter 100% cocoa dark chocolate bar,
made from Ecuadorian cocoa from the Hacienda Limon estate.
