A little melted chocolate and a selection of fruits like Strawberries, Pineapple and Peaches make a great dessert for any mealtime or party, and are really quick and easy to prepare or prepare in advance.
Top Tip: Dry washed fruit to help the chocolate coat evenly or drain tinned fruits well.
While the chocolate is still molten, roll in chocolate vermicelli, chocolate curls or other toppings & sprinkles. For extra effect, use a different chocolate and drizzle a little over set fruit.
Top Tip: Contrasting colours of toppings and chocolate make a great visual combination.
For a real gloss to the chocolate surface, temper the chocolate during melting. Tempered chocolate also sets harder if you want a real 'snap' to your chocolate dipping. (See our Chocolate Tempering Guide here).

One of the most popular ways of serving chocolate at a party is to use a chocolate fountain.
Chocolate fountains come in all sizes and can be bought or rented.
Typically, a chocolate fountain will work with any chocolates, but if the chocolate gets a little sticky and won't flow properly, then you can usually remedy this by adding (sparingly!) powdered cocoa butter, until the consistency improves. Using cocoa butter retains the integrity and healthiness of the chocolate, rather than adding vegetable oil.
Belgian chocolatiers, Callebaut, produce a particular Fountain Chocolate range. How is this different to regular cooking chocolate? The fountain chocolate range (milk chocolate & dark chocolate) has a slightly higher cocoa butter content than regular chocolate couvertures, which makes it flow more easily through the fountain machine.
Available in 2.5kg bag sizes only, in chocolate chip (callets) form, making it easy to pour and add the right amount to your fountain.
Read your own fountain's instructions carefully to ascertain how much chocolate it will hold and need to get flowing. The chocolate fountain industry usually allow around 50g of chocolate per portion / guest as a rough guide.
